Flavours steeped in history
The origins of sushi lie in the way seafood used to be preserved. Seafood was fermented in Asia by adding rice. This rice was not discarded in Japan, but was instead eaten with the seafood. To make this combination taste good, the Japanese would serve small portions accompanied by seaweed, vegetables, eggs or shellfish. Maki, nigiri and gunkan emerged as the favourites and remain the most well-known varieties in our Western food culture today.
